We’ve all seen honey in golden, amber, or pale yellow hues—but blue? A groundbreaking Greek creation is changing perceptions of the classic natural sweetener, infusing it with color, nutrients, and global appeal.

Blue honey is an innovative Greek product made by blending locally produced honey—often from orange blossoms—with an extract of fresh spirulina, a nutrient-rich blue-green algae widely known as a “superfood.”

Chemical engineer Giorgos Lignos, the creator of blue honey, explained the process on MEGA Weekend:

“It’s 98% honey and 2% spirulina. I extract the blue pigment from spirulina cells, concentrate it, and add it to the honey. I use a light honey variety, such as orange blossom, so the blue color dominates. It doesn’t affect the taste or texture,” he said.

The result is not only visually stunning but also rich in antioxidants and natural nutrients. The innovation has already caused a sensation among visitors in Chania, Crete, where tourists are drawn to its striking appearance.

“We display our jars alongside other local products, and as soon as tourists see the blue color, they’re amazed—they just have to try it,” Lignos added.
