  • 200g finely chopped chocolate
  • 1 can sweetened condensed milk (400g)
  • Pinch of salt
  • 1 vanilla bean
  • 350ml cold heavy cream (35% fat)
  • 50g grated chocolate


  1. Place the finely chopped chocolate, sweetened condensed milk, salt, and vanilla bean in a heatproof bowl.
  2. Melt the ingredients in a bain-marie stirring occasionally. Allow the mixture to cool.
  3. Whip the cold heavy cream until stiff peaks form.
  4. Gently fold 2-3 tablespoons of the whipped cream into the cooled melted chocolate mixture to lighten it.
  5. Gradually fold in the rest of the whipped cream using a silicone spatula, ensuring the mixture is homogeneous but retains its volume.
  6. Add the grated chocolate and gently fold it into the mixture with a spoon.
  7. Transfer to a bowl and freeze it for about 5-6 hours until firm.
