The cereal bars take

Ingredients

  • 250g soft dried dates
  • 1 cup oatmeal flakes, ground into powder
  • 1/2 cup whole grain cereals
  • 3 tbsp lukewarm honey (optional)
  • 2 tbsp peanut butter or whole sesame tahini
  • 1 cup raw or roasted unsalted almonds, roughly chopped
  • 100g finely chopped chocolate
  • 1 tbsp chia seeds
  • 1 tbsp ground flaxseed
  • Optional additions include:
    • Raisins
    • Cranberries
    • Cinnamon
    • Sesame seeds
    • Sunflower seeds
    • Dried coconut

Instructions

  1. Start by selecting soft, dried dates. Grind them into a paste using a blender.
  2. In a mixing bowl, combine the ground dates, honey, ground oatmeal, flaxseed, peanut butter, almonds, and chia seeds. Mix well with a spoon until a dough-like consistency forms.
  3. Break the cereal into small pieces and add it to the mixture. Stir until evenly distributed.
  4. Incorporate the chocolate pieces into the mixture.
  5. Line a 24 cm square baking dish with non-stick parchment paper.
  6. Transfer the mixture into the prepared baking dish. Use a flat-bottomed glass to press and flatten the surface, compacting the mixture into the dish evenly.
  7. Place the baking dish in the freezer and allow the mixture to chill for 30 minutes.
  8. Once chilled, remove the mixture from the baking dish and cut it into long cereal bars using a knife.
  9. Store the cereal bars with chocolate in an airtight container to keep them fresh.
