Ingredients
For the beef and vegetables:
- 1½ kg beef (chuck or similar cut), cut into large chunks
- ½ cup olive oil
- 1 onion, finely chopped
- 2 spring onions, finely chopped
- 1 leek, finely chopped
- 1 green bell pepper, diced
- 2 red bell peppers, diced
- 1 carrot, diced
- 1 cup dry white wine
- ½ kg tomatoes, chopped
- 2 hot chili peppers, finely chopped
- 1 tsp dried oregano
- 1 tsp dried mint
For the yogurt sauce:
- 500 g Greek-style strained yogurt
- ½ tsp dried oregano
- ½ tsp dried mint
- 1 tbsp vinegar
- Salt and freshly ground pepper
To serve:
- Fresh mint leaves (optional)
- Cooked rice
Directions
Brown the beef
Heat the olive oil in a large pot over medium-high heat.
Sear the beef pieces on all sides until golden.
Cook the vegetables
Add all the chopped vegetables, including onion, spring onions, bell peppers, leek, carrot, and chili peppers.
Sauté for a few minutes until they begin to soften.
Optional: You can add other vegetables you enjoy, such as peas or green beans.
Deglaze and simmer
Pour in the white wine and let it reduce slightly.
Add the chopped tomatoes, cover the pot, and reduce the heat.
Simmer gently for 1 hour and 15 minutes, until the beef is tender.
If needed, add a splash of warm water to prevent sticking.
Finish with herbs
Towards the end of cooking, stir in the dried oregano, dried mint, and season with salt and pepper.
Remove the pot from the heat and let it rest for 10 minutes.
Prepare the yogurt sauce
In a small bowl, mix all the yogurt sauce ingredients with a spoon until smooth.
Pour over the beef and vegetables and gently stir to combine, forming a creamy sauce.
Serve
Serve hot over rice, garnished with fresh mint leaves if desired.
Recipe Tips
Avoid adding extra water – the vegetables release enough liquid while cooking, which helps create a naturally flavorful sauce. Overwatering can dilute the taste.
