Ingredients

  • 2 tbsp olive oil
  • 1 onion, sliced
  • 2 cups water
  • 1/2 cup Carolina rice
  • 2 cups cooked lentils
  • Salt
  • Pepper
  • Fresh mint, to serve
  • Yogurt, to serve

Instructions

  1. Rinse the rice under running water until it runs clear and let it drain.
  2. In a saucepan, heat the olive oil and sauté the onions over medium heat for 10 minutes, until golden brown.
  3. Remove half of the onions and set them aside for later.
  4. Drain the rice and add it to the onions, stirring to coat with oil.
  5. Add the cooked lentils, water, salt, and pepper, and bring to a boil.
  6. Simmer partially covered for 15 minutes until the rice is tender. If it becomes dry, add a little hot water.
  7. Finally, stir in the fresh mint. Turn off the heat and let it stand for 10 minutes.
  8. Serve the lentils and rice on plates, garnishing each portion with the reserved onions.
