Ingredients

  • 1/4 cup olive oil
  • 4 fresh onions, finely chopped
  • 1 cup green peas
  • 2 carrots, finely chopped
  • 200 grams tender green beans, finely chopped
  • 1 red bell pepper, diced
  • 2 cups brown rice (or long-grain rice)
  • 1 tablespoon dill
  • 5 cups chicken broth

Instructions

  1. Warm the olive oil over medium heat and add the fresh onions, sautéing until they become translucent, for about 2 to 3 minutes.
  2. Add the bell pepper, carrot, green peas, rice, chicken broth, salt, and pepper.
  3. Stir well and sprinkle with dill.
  4. Partially cover the pot and simmer the rice until holes appear on its surface (about 18 to 20 minutes).
  5. Remove from the heat.
  6. Cover the pot with a clean kitchen towel, place the lid on top, and let the rice sit for 5 to 10 minutes to absorb the liquids.
  7. Serve as a light meal or as a side dish with meat or chicken.
