Ingredients

  • ½ cup brown sugar (preferably)
  • ½ cup olive oil
  • 2 tbsp cognac
  • Zest of 1 unwaxed orange
  • ½ tsp ground cinnamon
  • ¼ tsp ground cloves
  • 1 pinch salt
  • 1 cup fresh orange juice
  • ½ tsp baking soda
  • 1½ cups whole wheat flour (preferably), sifted
  • 1½ tsp baking powder

Directions

  1. Make sure all ingredients are at room temperature. The flour should be sifted, and the oven should be fully preheated so the cake rises properly.

  2. In a bowl, combine the brown sugar, olive oil, cognac, orange zest, cinnamon, cloves, and salt. Whisk until the mixture becomes smooth and well combined.

  3. Dissolve the baking soda in the fresh orange juice, then add it to the bowl and mix.

  4. In a separate bowl, mix the whole wheat flour with the baking powder. Gradually add it to the wet ingredients, stirring gently until a smooth batter forms. Avoid overmixing.

  5. Pour the batter into a greased and floured cake pan.
