This “set and forget recipe” is guaranteed to wow your friends and family at the Christmas dinner table.

Ingredients:

  • For the pork leg:
  • 1 whole pork leg with skin, approx. 3kg
  • 2 tbsp honey
  • 1 tbsp balsamic vinegar
  • 3 tbsp mustard
  • Juice and zest of 2 oranges
  • 1 rosemary bunch
  • 2 rosemary branches
  • Salt
  • Pepper
  • For the potatoes:
  • ½ kg small potatoes
  • 2 garlic cloves
  • Juice of 2 oranges
  • Juice of 1 lemon
  • 1/2 cup olive oil
  • 2 tbsp mustard
  • Salt
  • Pepper

Instructions:

  1. Take the pork out of the refrigerator and let it sit in room temperature for at least an hour.
  2. Place it in a baking dish and score the surface of the fat in diamond shapes using a sharp knife.
  3. Pour the orange and lemon juice over it.
  4. Add salt and pepper, then massage the pork.
  5. Add the rosemary and orange zest to the baking dish.
  6. Cover the pork with some baking paper and aluminum foil.
  7. Bake in a preheated oven at 200ºC, on the lower rack, for 1 hour and 30 minutes.
  8. After 1.5 hours of baking, uncover the leg, add the potatoes, garlic with its peel on, and all the remaining liquids in the baking dish.
  9. In a small bowl, mix your honey with balsamic vinegar and mustard.
  10. Brush the pork with the mixture, reduce the oven temperature to 170ºC, and continue baking for 1 hour and 30 minutes until the skin is crispy, and the potatoes are tender.
