Ingredients

Serves 6

  • 500g spinach, washed and dried as much as possible
  • 2 tbsp olive oil
  • 2 scallions, finely chopped
  • 2 tbsp dill, finely chopped
  • 4 fresh eggs
  • 3 tbsp grated feta cheese
  • A pinch of nutmeg

Directions

  1. Heat the olive oil in a deep frying pan or non-stick saucepan, and sauté the spinach with the fresh onion for a few minutes until they’ve wilted.

  2. Season with the herbs, mix well, and remove from the heat.

  3. Drain the sautéed spinach in a strainer.

  4. Place the spinach in a small ovenproof and greased dish.

  5. Make 4 small wells and break 1 egg into each.

  6. Season with salt and pepper and sprinkle with nutmeg.

  7. Sprinkle the grated feta cheese on top.

  8. Bake in a preheated oven at 200°C for 15 minutes or until the eggs are cooked.

  9. Serve immediately, best accompanied by a few slices of toasted bread.
