  • 1.5 kg beef (chuck or brisket)
  • 2 tbsp butter
  • 4 tbsp olive oil
  • 3 cups hot water
  • 2 garlic cloves
  • 3 potatoes
  • 3 bell peppers (mixed colors)
  • 3 onions
  • 3 ripe tomatoes, or 2 cans chopped tomatoes
  • 250 g flat green beans (fresh or frozen)
  • A little parsley, chopped
  • A pinch of paprika
  • Freshly ground black pepper
  • Salt
  • 150 g feta, cut into pieces
  • 2 tbsp balsamic vinegar

Directions

  1. Cut the beef into large pieces. Heat 2–3 tablespoons of olive oil in a pot and brown the beef for a few minutes.

  2. Add 3 cups of hot water, cover, and simmer over medium heat for 35–40 minutes.

  3. Peel and slice all the vegetables.

  4. In a large baking dish or casserole, layer the potatoes first, followed by the beef.

  5. Add a layer of sliced onions, then peppers, whole green beans, and finally sliced tomatoes.

  6. Tuck in the garlic cloves and small pieces of butter.

  7. Sprinkle with parsley and paprika.

  8. Pour 1 cup of the beef stock over the dish (reserve the rest for soups, sauces, or rice). Drizzle with balsamic vinegar and olive oil.

  9. Cover the dish with parchment paper and then seal with foil.

  10. Bake in a preheated oven at 250°C (480°F) with fan on for 30 minutes, then reduce the temperature to 160°C (320°F) and bake slowly for about 2 hours.

  11. After 2 hours, uncover the dish and scatter the feta pieces on top.

  12. Bake uncovered for another 30 minutes, until the feta melts and the dish reduces to a rich, flavorful oil.
