For the Souvlaki:
  • 600 g (1.3 lb) beef sirloin, or pork/chicken, cut into long strips
  • 2 tbsp vinegar
  • 1 tbsp paprika
  • Freshly ground black pepper, to taste
  • A splash of olive oil
  • 6 pita breads
  • 2 onions, sliced
  • 2 tbsp olive oil
  • A few lettuce leaves or salad greens
  • 2 tomatoes, thinly sliced
For the Yogurt Sauce:
  • 300 g (1¼ cups) strained yogurt
  • 1 tbsp fresh mint, chopped
  • 1 tbsp fresh parsley, chopped
  • 2 tbsp olive oil
  • Salt and pepper, to taste

Directions

  1. Marinate the Meat:
    Place the meat strips in a bowl. Sprinkle with paprika and pepper, drizzle with vinegar and a little olive oil, and mix well. Cover and refrigerate for at least a few hours to tenderize.

  2. Caramelize the Onions:
    Heat 2 tbsp olive oil in a skillet over medium heat. Sauté the onions for 6–7 minutes until translucent.

  3. Cook the Meat:
    Drain the marinated meat and pat dry. Add it to the onions and continue cooking over low heat for 7–8 minutes, until the meat is fully cooked. Season with salt.

  4. Prepare the Yogurt Sauce:
    In a bowl, combine the yogurt, chopped mint, parsley, olive oil, salt, and pepper. Mix well.

  5. Warm the Pitas:
    Heat the pita breads in a dry non-stick pan for a few minutes, or warm them in the oven.

  6. Assemble the Souvlaki:
    On a sheet of parchment or clean surface, place a pita. Layer with lettuce leaves, tomato slices, meat with onions, and finish with a generous spoonful of yogurt sauce. Roll up tightly and serve immediately.
