• 800g ripe apricots, unblemished
  • 2 large eggs
  • 2 large egg yolks
  • 60g all-purpose flour
  • 150g sugar
  • 1 packet vanilla
  • 30g almond powder
  • 200g heavy cream (35% fat)
  • Powdered sugar, to serve
  • Whipped cream, to serve


  1. Wash and dry the apricots well, then cut them in half and remove the pits.
  2. Butter a 22 cm baking dish.
  3. Arrange the cleaned apricots tightly together in the dish, skin-side down.
  4. In a bowl, combine the eggs, flour, sugar, vanilla, almond powder, and heavy cream.
  5. Whisk the ingredients together until well combined, then pour over the apricots.
  6. Bake the apricot pie in a preheated oven at 180ºC for 30 minutes.
  7. Serve the apricot pie warm, topped with powdered sugar and whipped cream.
