  • 5 large eggs
  • 1 tsp butter
  • 1 tbsp olive oil
  • 1 tortilla wrap
  • 1 cup shredded mixed cheese
  • 2 slices of ham, finely chopped
  • 1 avocado
  • Chopped parsley
  • 1/2 cup spinach leaves
  • Tomato slices
  • Cream cheese or shredded cheese, to serve


Wash the spinach and chop it finely.

Cut the avocado, ham, and parsley into small pieces.

Beat the eggs in a bowl until well combined.

In a medium non-stick pan, warm the butter and oil on medium-heat until melted.

Pour in the beaten eggs and let them set for about 1 minute.

Place the tortilla on the eggs (they will still be a bit runny, but don’t worry it’ll help them stick to the tortilla), dipping it into the egg mixture on both sides so it gets fully coated with egg.

Cook for 30 seconds and then flip everything together in the pan to cook the other side.

Sprinkle the cheeses on the surface, add the spinach, ham, tomato slices, and avocado slices.

Lift with a spatula and fold in half, like a half-moon.

Leave for a minute until the cheese melts and serve.
