For the chicken:
- 8 chicken drumsticks
- 1 clove garlic, finely chopped
- Juice of 1 lemon
- 1 tbsp mustard
- 3 tbsp olive oil
- 1 tbsp fresh parsley, finely chopped
- 2 pinches dried oregano
- Salt and black pepper, to taste
- 300 g thick strained Greek yogurt (for serving)
- 4 ripe tomatoes, peeled and finely chopped
- 1 tbsp capers, rinsed and drained
- 1 clove garlic, finely chopped
- Juice of 1 lemon
- 2–3 tbsp olive oil
- A handful pitted olives, sliced
- 1 tbsp fresh parsley, finely chopped
- ½ bunch fresh mint, finely chopped
- Salt and black pepper, to taste
Directions
Marinate the chicken
In a small bowl, whisk together the lemon juice and mustard. Place the chicken drumsticks in a large mixing bowl and add the garlic, olive oil, lemon–mustard mixture, oregano, parsley, salt, and pepper. Toss well to coat.Roast
Arrange the drumsticks in a baking tray. Roast in a preheated oven at 200°C (400°F) for 30 minutes, turning them halfway through, until golden brown and fully cooked.Make the fresh tomato sauce
While the chicken is roasting, combine the chopped tomatoes, garlic, olives, parsley, mint, lemon juice, capers, salt, pepper, and olive oil in a bowl. Mix well, gently pressing the tomatoes so they release their juices.Combine
Once the chicken is cooked, pour the fresh tomato sauce over the drumsticks in the baking tray. Stir gently to mix the roasting juices with the sauce and coat the chicken.Serve
Spread the yogurt onto a long serving platter. Arrange the chicken drumsticks on top, spooning over some of the sauce. Serve the remaining sauce in a separate bowl at the table.
Recipe Tips
For extra flavor, marinate the chicken for at least 1–2 hours (or overnight) before roasting. This allows the lemon and herbs to penetrate the meat for maximum juiciness.
