  • 6 red sweet potatoes
  • 1 potato
  • 1 piece yellow pumpkin
  • ¼ cup olive oil
  • 3–4 sprigs fresh thyme
  • 2 garlic cloves
  • Salt
  • Freshly ground black pepper

Directions

  1. Peel all the vegetables, wash them well, and cut them into large wedges or chunky pieces.

  2. Do not discard the sweet potato peels. Wash them thoroughly before peeling and use them to make crispy sweet potato chips.

  3. Place the vegetables in a baking tray. Drizzle with olive oil, season with salt and pepper, and add the garlic cloves and thyme.

  4. Toss well to coat evenly, then cover the tray tightly with aluminum foil to trap steam during cooking.

  5. Bake in a well-preheated oven at 180°C (356°F) on the fan setting, on the middle rack, for 45 minutes.

  6. Remove the foil and continue baking for about 15 minutes, until the vegetables are lightly golden.

  • Covering the tray with foil prevents the sweet potatoes from burning, allowing them to cook gently in their own natural juices without added moisture.
