Ingredients

For the marinade:

  • 1/4 cup olive oil
  • 1 lime
  • 1 tsp cumin
  • 1 tbsp paprika
  • 1 tsp cayenne pepper
  • 1 clove garlic
  • 1/2 onion
  • 2 chicken breast fillets
  • Salt
  • Pepper

For the vegetables:

  • 1 onion
  • 1 green bell pepper
  • 1 red bell pepper
  • 1 lime
  • Flour tortillas

For the guacamole:

  • 3 ripe avocados
  • 1 lime
  • 1 small onion
  • 2 tomatoes
  • 3 tbsp fresh cilantro
  • 1 clove garlic
  • Salt
  • Cayenne pepper

For serving:

  • 1 strained yogurt 200 grams
  • Some grated yellow cheese
  • 8 Mexican pitas

Instructions

  1. First, cut the chicken into small pieces.
  2. Put it in a food bag.
  3. Add all the marinade ingredients.
  4. Mix the ingredients and leave in the refrigerator for at least 30′. The longer you leave it, the tastier it will be.
  5. Grill the chicken for 4′-5′ on each side.
  6. Heat the olive oil and sauté all the vegetables until they soften.
  7. Squeeze the lime juice on the vegetables.
  8. Peel the avocado and mash it with a fork.
  9. Add all the other ingredients. Mix and chill.
  10. Wrap the pitas in aluminum foil and bake for 5′ at 200ºC to warm them up.
  11. Fill them with chicken, guacamole, vegetables, yogurt, and cheese and wrap.
