Ingredients:

  • ¼ cup olive oil
  • 4 green onions, finely chopped
  • 1 cup peas
  • 2 carrots, finely chopped
  • 200 g tender green beans, finely chopped
  • 1 red bell pepper, diced
  • 2 cups brown rice
  • 1 tablespoon dill
  • 5 cups chicken broth

Instructions:

  1. Heat the olive oil over medium heat and add the green onions, sautéing until translucent, about 2 to 3 minutes.
  2. Add the bell pepper, carrot, peas, green beans, rice, broth, salt, and pepper.
  3. Stir and sprinkle with dill.
  4. Partially cover the pot and simmer the rice until small holes appear on the surface (about 18 to 20 minutes). Then, remove it from the heat.
  5. Cover the pot with a clean towel, place the lid on top, and let the rice sit for 5 to 10 minutes to absorb the liquid.
  6. Serve as a light meal or as a side dish with meat or chicken.
