Ingredients

  • 1 kg potatoes
  • 3–4 garlic cloves
  • ⅓ cup olive oil
  • Juice of 1 lemon
  • A few small pieces of salt cod (desalted)
  • Salt, to taste

Directions

  1. To prepare the aliada, reserve a few small pieces of desalted salt cod to enhance the flavor.

  2. Place the fish pieces in a pot and cover with plenty of water. Bring to a boil, then reduce the heat and simmer gently for 20 minutes to extract their flavor.

  3. Strain the broth and set it aside.

  4. Peel the potatoes, cut them into chunks, and boil them in a separate pot for about 20 minutes, until tender.

  5. Drain the potatoes thoroughly and mash them using a potato ricer or masher until smooth.

  6. In a blender, purée the garlic cloves with the olive oil, then add this mixture to the mashed potatoes. Mix well until combined.

  7. Add lemon juice to taste, adjusting the acidity as desired.

  8. Gradually incorporate the reserved fish broth, stirring continuously, until the dip reaches a smooth and creamy consistency. Be careful not to add too much liquid.

  9. Taste and adjust the salt if needed, keeping in mind that the broth is naturally salty.
