Ingredients

Serves 2

  • 250 g pasta (spaghetti or your favorite type)
  • 1 pack Norwegian salmon fillet
  • Salt, to taste
  • Pepper, to taste
  • 2 tbsp olive oil
  • 2 tbsp finely chopped spring onions
  • 4 cherry tomatoes, halved
  • 1 shot vodka
  • 1 tbsp cream cheese

For serving:

  • Fresh dill, finely chopped
  • Lime zest

Directions

  1. Cook the Pasta
Boil the pasta in salted water for 1 minute less than the package instructions. Reserve some pasta water before draining.

  2. Prepare the Salmon
Brush the salmon fillets with 1 tablespoon of olive oil and season lightly with salt and pepper.

  3. Pan-Sear the Salmon
Heat a non-stick skillet over medium-high heat. Cook the salmon fillets skin-side down for about 2½ minutes. Flip and cook for another 2 minutes. Remove from the pan and flake into bite-sized pieces.

  4. Build the Sauce
In the same pan, add the remaining tablespoon of olive oil. Sauté the spring onions and cherry tomatoes for 2 minutes. Deglaze with the vodka and let it bubble for a moment.

  5. Combine
Add the flaked salmon, cream cheese, and the hot pasta along with a few spoonfuls of pasta water. Toss everything together quickly until the sauce coats the pasta evenly and becomes creamy.

  6. Serve
Plate immediately, topping with chopped dill and a touch of freshly grated lime zest.
