Ingredients
Serves 2
- 250 g pasta (spaghetti or your favorite type)
- 1 pack Norwegian salmon fillet
- Salt, to taste
- Pepper, to taste
- 2 tbsp olive oil
- 2 tbsp finely chopped spring onions
- 4 cherry tomatoes, halved
- 1 shot vodka
- 1 tbsp cream cheese
For serving:
- Fresh dill, finely chopped
- Lime zest
Directions
Cook the Pasta
Boil the pasta in salted water for 1 minute less than the package instructions. Reserve some pasta water before draining.Prepare the Salmon
Brush the salmon fillets with 1 tablespoon of olive oil and season lightly with salt and pepper.Pan-Sear the Salmon
Heat a non-stick skillet over medium-high heat. Cook the salmon fillets skin-side down for about 2½ minutes. Flip and cook for another 2 minutes. Remove from the pan and flake into bite-sized pieces.Build the Sauce
In the same pan, add the remaining tablespoon of olive oil. Sauté the spring onions and cherry tomatoes for 2 minutes. Deglaze with the vodka and let it bubble for a moment.Combine
Add the flaked salmon, cream cheese, and the hot pasta along with a few spoonfuls of pasta water. Toss everything together quickly until the sauce coats the pasta evenly and becomes creamy.Serve
Plate immediately, topping with chopped dill and a touch of freshly grated lime zest.
