Ingredients

For the carrot salad:

  • 6 large carrots
  • The green leaves of green onions
  • 2 tbsp. black raisins
  • 2 tbsp. sliced almonds
  • 1 tbsp. fresh grated ginger
  • A bit of orange zest

For the dressing:

  • Juice from 1/2 lemon
  • 2 tbsp. orange juice
  • 1/4 cup olive oil
  • 1 tbsp. mustard
  • 1 tsp. honey
  • 1 pinch of cumin
  • 1 pinch of cinnamon
  • A little salt
  • A little pepper

Instructions

  1. Grate the carrots in a food processor or on a coarse grater.
  2. Place them in a bowl.
  3. Add the green onion leaves, raisins, almonds, and fresh ginger.
  4. Add a little orange zest.
  5. Squeeze the juice of half an orange into the salad.
  6. Add a little salt.
  7. Stir to marinate the ingredients until the dressing is prepared.
  8. In a bowl, combine all the dressing ingredients and whisk lightly.
  9. Pour over the salad.
  10. Stir and let it marinate in the fridge for 30 minutes.
  11. Serve chilled.
