Prep. Time   Baking Time   Serves

  • 200 grams rice
  • 1½ cups water
  • 1 liter cold milk
  • 2 tbsp cornstarch or rice flour
  • 100 grams sugar
  • A pinch of mastic
  • 2 egg yolks

  1. Bring the water to a boil and the rice.
  2. Once the rice has absorbed the water mix in the milk (reserve about 3 tbsps). Dissolve the cornstarch some cold water and add to the rice along with the mastic.
  3. Add the sugar and let it simmer for 2-3 minutes, stirring constantly with a wooden spoon.
  4. Then we beat the egg yolks with the reserved tablespoons of milk.
  5. Add some the rice pudding to the egg mixture to gradually change the temperature, and then pour the mixture into the rest of the rice.
  6. Add the pudding into a ovenproof dish, placed in a tray with cold water.
  7. We place it in the preheated grill until a very dark crust forms on top (be careful not to burn it though).
