Ingredients

  • 400g asparagus
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 garlic clove, crushed
  • Salt
  • Freshly ground pepper
  • 1 tbsp finely chopped parsley (or dill)
  • 2 tbsp grated Parmesan cheese

Instructions

  1. The asparagus should be cleaned from its fibers and ends. If the asparagus are small, leave them whole, but , cut them into pieces if they are on the larger side.
  2. Heat a non-stick pan over medium to high heat and add the olive oil.
  3. Add the butter and once melted, sauté the crushed garlic for 1 minute before removing it.
  4. Add the asparagus.
  5. Season with salt and grind plenty of pepper.
  6. Sauté, stirring regularly for about 5 minutes until they soften and roast, but do not melt. It does not need to take a lot of color. The time needed always depends on their size.
  7. Remove the pan from the heat and as the asparagus are still warm, add the Parmesan cheese and stir a little until it starts to melt.
  8. Add the herbs and serve.
