Ingredients
Serves 6
- 500g spinach, washed and dried as much as possible
- 2 tbsp olive oil
- 2 scallions, finely chopped
- 2 tbsp dill, finely chopped
- 4 fresh eggs
- 3 tbsp grated feta cheese
- A pinch of nutmeg
Directions
Heat the olive oil in a deep frying pan or non-stick saucepan, and sauté the spinach with the fresh onion for a few minutes until they’ve wilted.
Season with the herbs, mix well, and remove from the heat.
Drain the sautéed spinach in a strainer.
Place the spinach in a small ovenproof and greased dish.
Make 4 small wells and break 1 egg into each.
Season with salt and pepper and sprinkle with nutmeg.
Sprinkle the grated feta cheese on top.
Bake in a preheated oven at 200°C for 15 minutes or until the eggs are cooked.
Serve immediately, best accompanied by a few slices of toasted bread.
