In recent years, as we all attempt to eat more balanced and healthy, we’ve gotten familiar with the sweet potato. Rich in fiber, antioxidants, vitamins (mainly A and C), and the good carbohydrates that keep us energized. By adding sweet potato into your diet, whether boiled or grilled, you supercharge your body. It aids in digestion and metabolism, improves eyesight and the quality of your skin, boosts your immune system and keeps your sugar intake at a good level. Sweet potato is a real treasure.
Beyond all this, it’s also delicious. As aforementioned some like it grilled, others love sweet potato French fries, pureed with garlic and thyme, as soup or added into a protein-rich salad. We’ve tried it in all its poetic iterations, but we’re always looking for a new way to enjoy it! TO BHMA asked Greek chef Elpida Morfouli for her favorite sweet potato-based recipe.

The chef, who recently spent a few days in South Africa together with her husband Rafael Tsakiris designing the menu of a luxury safari lodge, got to learn more about locally grown produce there—one of which is the sweet potato. She got the idea to create a unique, chocolatey brownie that is healthy yet tastes sinful; resembling a perfectly moist chocolate cake.
