Ingredients

  • 2 ripe avocados
  • 4 large eggs
  • ½ cup crumbled feta cheese
  • 1 slice bacon
  • Toasted bread, for serving
  • Salt & pepper, to taste
  • Tomato slices, for garnish

Directions

  1. Preheat the Oven

    Preheat your oven to 200°C (fan-assisted).

  2. Prepare the Bacon

    Heat a non-stick pan and cook the bacon for 2-3 minutes until crispy.

  3. Place on paper towels to absorb excess oil, then chop into small pieces.

  4. Prepare the Avocados

    Cut the avocados in half and remove the pits.

  5. Using a spoon, scoop out a little flesh to create a larger cavity for the eggs.

  6. Sprinkle the removed avocado with a few drops of lemon juice to prevent browning and set aside for serving.Assemble & Bake

  7. Place the avocado halves in a small baking dish, ensuring they fit snugly and remain stable.

  8. Sprinkle each avocado half with feta and crispy bacon.

  9. Carefully crack an egg into each cavity.

  10. Season with salt and pepper.

  11. Bake on the middle rack for 12-14 minutes, or until the egg whites are set but the yolks remain slightly runny.

  12. Serve & Enjoy

    Serve warm with toasted bread, fresh tomato slices, and the reserved avocado flesh on the side
