  • 1.2 kg (2.6 lbs) beef chuck or round (cut into large chunks)
  • 2 onions, finely chopped
  • 4 bell peppers (mixed colors), sliced into strips
  • 1 garlic clove, minced
  • 1 cup dry white wine
  • 1/2 cup olive oil
  • 1 ripe tomato, diced
  • 2 tbsp fresh parsley, finely chopped
  • Salt, to taste
  • Freshly ground black pepper, to taste

Directions

  1. Brown the meat:
    Cut the beef into serving-sized pieces. In a large pot, heat half the olive oil over medium-high heat. Sear the beef on all sides for about 6–7 minutes until nicely browned.

  2. Sauté aromatics:
    Add the garlic and chopped onions. Sauté for another 5 minutes, until the onions become translucent.

  3. Deglaze with wine:
    Pour in the white wine and cook over high heat for 2–3 minutes to let the alcohol evaporate.

  4. Simmer:
    Stir in the diced tomato. Reduce the heat to low, cover, and simmer gently for about 1 hour and 30 minutes, until the beef is tender. Add a splash of water during cooking only if necessary — the goal is to end up with a rich oil-based sauce, not a soupy one.

  5. Prepare the peppers:
    While the beef is nearly done, heat the remaining olive oil in a deep frying pan. Add the bell pepper strips and sauté for 4–5 minutes until just softened and glossy.

  6. Combine and finish:
