  • 1 boiled potato, diced
  • 1 zucchini, thinly sliced
  • 1 red bell pepper, finely chopped
  • 1 spring onion, finely chopped
  • 2 tbsp olive oil + extra for spraying
  • 2 cocktail sausages, thinly sliced
  • 6 large eggs
  • ½ cup shredded melting cheese (e.g., gouda, mozzarella, cheddar)
  • Salt & freshly ground pepper, to taste

Directions

  1. Prep the Veggies & Sausage
    Place the diced boiled potato in a mixing bowl. Add the sliced zucchini, red pepper, spring onion, sliced sausages, and olive oil. Toss to combine.

  2. Pre-Cook in the Air Fryer
    Line your air fryer basket with a non-stick or silicone insert and spray it lightly with olive oil.
    Transfer the veggie-sausage mixture to the basket and cook at 200°C (390°F) for 8 minutes.

  3. Mix the Eggs
    In a separate bowl, whisk the eggs. Stir in the shredded cheese, salt, and pepper.

  4. Add the Eggs to the Air Fryer
    Pour the egg mixture over the cooked vegetables in the basket. Stir gently with a spoon to ensure everything is coated evenly with the eggs.

  5. Final Cook
    Reduce the temperature to 180°C (355°F) and cook for 18 minutes, or until the center is fully set, the omelette has puffed slightly, and the top is lightly golden.

  6. Cool & Serve
    Let the omelette rest for a few minutes in the basket to firm up before slicing and serving.
