Ingredients

- 2 large eggs
- 300 g (1¼ cups) strained Greek yogurt
- 100 g (½ cup) olive oil
- 6 small spring onions (with tender green tops), sliced
- ½ bunch fresh dill, finely chopped
- 200 g (7 oz) barrel-aged feta cheese, crumbled
- 150 g (5 oz) mixed melting cheeses, grated
- 100 g (¾ cup) self-raising flour
- 1 tbsp sweet paprika
- Freshly ground black pepper
- 2 tbsp cornmeal, semolina, or breadcrumbs (for the base)
Directions
Prepare the Batter:
In a large mixing bowl, whisk together the eggs, yogurt, and half of the olive oil until smooth.Add the Vegetables and Cheese:
Stir in the spring onions, dill, plenty of black pepper, and paprika until the onions are evenly coated.
Add the feta and the grated cheeses, then fold in the flour until the mixture is well combined.Prepare the Baking Dish:
Grease the base and sides of a shallow pie dish with 2–3 tablespoons of olive oil. Sprinkle the cornmeal (or semolina/breadcrumbs) evenly over the bottom — this helps form a light crust.Assemble and Bake:
Pour the mixture into the dish, smooth the surface with a spoon, and drizzle with the remaining olive oil.
Bake in a preheated oven at 180°C (350°F) for about 50 minutes, until golden brown all over and set in the center.Serve:
Allow the pie to rest for about 15 minutes before cutting. Serve warm or at room temperature.
