Everything you’ll need to make this Apple Cake
- 150 g oil (vegetable or sunflower)
- 120 g powdered sugar
- 1 tbsp lemon juice
- ½ tsp baking soda
- 1 tsp cinnamon
- 1 apple (grated)
- 250 g self-rising flour
- 1 tbsp cornstarch (heaping)
- 1 apple (chopped into small cubes)
- Powdered sugar for serving
Instructions
- Grease a 10×25 cm (4×10 in) loaf pan with oil using a pastry brush.
- Line the pan with parchment paper.
- Preheat the convection oven to 160°C (320°F).
- Grate one apple and set it aside in a bowl.
- Dice the second apple into small cubes and set it aside separately.
- Sift the self-rising flour into a bowl and set it aside.
- In a large bowl, combine the oil, powdered sugar, cornstarch, and cinnamon. Whisk until smooth.
- Stir in the lemon juice and baking soda. Mix until combined.
- Gradually add half of the sifted flour to the wet mixture, stirring gently.
- Fold in the grated apple and the remaining flour. Mix gently with a spatula until the batter is smooth.
- Pour the batter into the prepared pan.
- Place the diced apple pieces on top and gently press them into the batter.
- Place the pan on the middle rack of the oven and bake for 50 minutes, or until a skewer inserted into the center comes out clean.
- Let the cake cool completely in the pan before removing it.
- Dust the top of the apple cake with powdered sugar before serving.
