Everything you’ll need to make this Apple Cake
  • 150 g oil (vegetable or sunflower)
  • 120 g powdered sugar
  • 1 tbsp lemon juice
  • ½ tsp baking soda
  • 1 tsp cinnamon
  • 1 apple (grated)
  • 250 g self-rising flour
  • 1 tbsp cornstarch (heaping)
  • 1 apple (chopped into small cubes)
  • Powdered sugar for serving

Instructions

    • Grease a 10×25 cm (4×10 in) loaf pan with oil using a pastry brush.
    • Line the pan with parchment paper.
    • Preheat the convection oven to 160°C (320°F).
    • Grate one apple and set it aside in a bowl.
    • Dice the second apple into small cubes and set it aside separately.
    • Sift the self-rising flour into a bowl and set it aside.
    • In a large bowl, combine the oil, powdered sugar, cornstarch, and cinnamon. Whisk until smooth.
    • Stir in the lemon juice and baking soda. Mix until combined.
    • Gradually add half of the sifted flour to the wet mixture, stirring gently.
    • Fold in the grated apple and the remaining flour. Mix gently with a spatula until the batter is smooth.
    • Pour the batter into the prepared pan.
    • Place the diced apple pieces on top and gently press them into the batter.
    • Place the pan on the middle rack of the oven and bake for 50 minutes, or until a skewer inserted into the center comes out clean.
    • Let the cake cool completely in the pan before removing it.
    • Dust the top of the apple cake with powdered sugar before serving.
