  • 4 tbsp olive oil
  • 2 scallions, finely chopped
  • 200g mushrooms
  • 1/4 cup dry white wine
  • Some cooked chicken or other meat
  • 3 cups partially boiled fettuccine
  • 1 cup chicken or meat broth
  • 100g Roquefort (blue cheese)
  • Salt
  • Pepper
  • Thyme
  • Parsley, finely chopped

Directions

  1. Heat the olive oil in a saucepan and sauté the scallions for 1-2 minutes.

  2. Add the mushrooms and continue sautéing for 2-3 minutes.

  3. Add the cooked chicken, sprinkle with pepper, and add thyme.

  4. Deglaze with white wine.

  5. Then add the blue cheese, partially boiled fettuccine, and broth.

  6. Season carefully with salt and let the sauce thicken over high heat for 2-3 minutes.

  7. Serve immediately.
