Ingredients
- 200g bulgur wheat
- 3 tomatoes, seeded and diced
- 2 cucumbers, seeded and finely chopped (with skin)
- 5 spring onions, finely chopped (including green parts)
- 1 garlic clove, minced (optional)
- 2 bunches fresh parsley, finely chopped
- 1 bunch fresh mint, finely chopped
- Juice of 1 lemon
- 150ml extra virgin olive oil
- Salt, to taste
Directions
Place the bulgur in a bowl and cover it with warm water until fully submerged.
Let it soak for 10 minutes, allowing it to absorb the water and soften.
In a medium bowl, combine the bulgur, tomatoes, cucumbers, spring onions, garlic (if using), parsley, and mint.
Add salt, lemon juice, and olive oil, then mix well.
Cover with plastic wrap and refrigerate for 2 hours to allow the flavors to meld.
Stir before serving and enjoy!
