  • 1 bunch fresh mint, finely chopped
  • Juice of 1 lemon
  • 150ml extra virgin olive oil
  • Salt, to taste

  2. Let it soak for 10 minutes, allowing it to absorb the water and soften.

  3. In a medium bowl, combine the bulgur, tomatoes, cucumbers, spring onions, garlic (if using), parsley, and mint.

  4. Add salt, lemon juice, and olive oil, then mix well.

  5. Cover with plastic wrap and refrigerate for 2 hours to allow the flavors to meld.
