Ingredients
- 2 ripe avocados
- 4 large eggs
- ½ cup crumbled feta cheese
- 1 slice bacon
- Toasted bread, for serving
- Salt & pepper, to taste
- Tomato slices, for garnish
Instructions
Preheat the Oven
- Preheat your oven to 200°C (fan-assisted).
Prepare the Bacon
- Heat a non-stick pan and cook the bacon for 2-3 minutes until crispy.
- Place on paper towels to absorb excess oil, then chop into small pieces.
Prepare the Avocados
- Cut the avocados in half and remove the pits.
- Using a spoon, scoop out a little flesh to create a larger cavity for the eggs.
- Sprinkle the removed avocado with a few drops of lemon juice to prevent browning and set aside for serving.Assemble & Bake
- Place the avocado halves in a small baking dish, ensuring they fit snugly and remain stable.
- Sprinkle each avocado half with feta and crispy bacon.
- Carefully crack an egg into each cavity.
- Season with salt and pepper.
- Bake on the middle rack for 12-14 minutes, or until the egg whites are set but the yolks remain slightly runny.
Serve & Enjoy
- Serve warm with toasted bread, fresh tomato slices, and the reserved avocado flesh on the side.
