Ingredients
Ingredients- 2 ripe avocados
- 4 large eggs
- ½ cup crumbled feta cheese
- 1 slice bacon
- Toasted bread, for serving
- Salt, to taste
- Freshly ground black pepper, to taste
- Fresh tomatoes, for serving
Directions
Preheat the oven to 200°C (390°F), fan setting.
In a hot non-stick pan, cook the bacon for 2-3 minutes until crispy. Transfer to paper towels to drain, then finely chop.
Cut the avocados in half and carefully remove the pits without damaging their shape. Using a spoon, scoop out a little of the flesh from each half to create a larger cavity for the eggs.
Drizzle the scooped avocado flesh with a few drops of lemon juice to prevent browning and set aside for serving.
Place the avocado halves in a small baking dish that fits them snugly, so they remain stable and upright.
Sprinkle each avocado half with some crumbled feta and chopped bacon.
Crack one egg into each avocado cavity.
Season with salt and pepper, then bake on the middle rack for 12-14 minutes, depending on how runny or set you prefer the yolks.
