Ingredients

Servings: 4

  • 4 tbsp olive oil
  • 4 chicken drumsticks or thighs (bone-in, skin-on)
  • 1 onion, finely chopped
  • 1 large carrot, diced or coarsely grated
  • ½ cup dry red wine (or chicken broth or hot water)
  • 1 bay leaf
  • 1 sprig fresh thyme
  • 2 cups ripe tomatoes, finely chopped (or canned)
  • Salt and freshly ground pepper, to taste
  • 500 g long hilopites (or tagliatelle or pappardelle)

Directions

  1. Sear the Chicken
    In a wide, shallow pot, heat the olive oil over medium heat.
    Sear the chicken pieces on all sides for about 8–10 minutes until the skin becomes crispy and golden.
    Remove the chicken and keep covered on a plate.

  2. Sauté the Vegetables
    In the same pot, using the remaining fat, add the onion and carrot.
    Sauté for about 5–6 minutes until the onion turns translucent.

  3. Deglaze and Simmer
    Return the chicken to the pot. Add the bay leaf and thyme.
    Pour in the wine and let it reduce completely, about 4–5 minutes.
    Add the tomatoes and enough hot water or broth to halfway cover the chicken.

  4. Cook the Chicken
    Cover the pot and simmer over medium heat for about 1 hour and 15 minutes, or until the chicken is tender and cooked through.
    Season with salt and pepper to taste.

  5. Shred the Chicken
    Once cooked, remove the chicken pieces with tongs.
    Let them cool slightly, then remove skin and bones.
    Shred the meat into bite-sized pieces and return it to the pot.
    Simmer the sauce uncovered until thickened and flavorful.

  6. Cook the Pasta
    Boil the hilopites in salted water according to package instructions.
    Drain and divide among serving plates.

  7. Serve
    Spoon the rich chicken sauce generously over the pasta and serve immediately.
