Ingredients

  • 800 g lamb leg, cut into cubes
  • 3 tbsp olive oil
  • 2 onions, finely chopped
  • 2 garlic cloves, finely chopped
  • ½ cup cognac
  • 800 ml chicken stock
  • Juice and zest of 1 orange
  • 1 cinnamon stick
  • 4 tbsp fresh mint, finely chopped
  • 1 tsp honey
  • 180 g dried apricots, halved
  • 50 g almonds, finely chopped
  • Salt and freshly ground black pepper, to taste

Directions

  1. Heat the olive oil in a large pot over medium-high heat. Add the lamb and sauté for about 4 minutes, until lightly browned on all sides.

  2. Transfer the lamb to a plate. In the same pot, add the onions and garlic and sauté for 5 minutes, until softened and fragrant.

  3. Return the lamb to the pot and carefully pour in the cognac. Allow it to simmer for a minute to evaporate the alcohol.

  4. Add the chicken stock, orange zest, orange juice, honey, and cinnamon stick. Season with salt and pepper.

  5. Cover the pot, reduce the heat to low, and simmer gently for 1 hour.

  6. Remove the lid and add the halved dried apricots and chopped mint. Continue cooking for another 30 minutes, or until the sauce has reduced and become rich and glossy.

  7. Just before removing the pot from the heat, stir in the chopped almonds.

    Serve immediately.

Recipe Tips

For even deeper flavor, lightly toast the almonds in a dry pan before adding them to the dish. Serve with fluffy rice, couscous, or crusty bread to soak up the fragrant sauce.
