Ingredients

  • 1 ripe avocado, sliced
  • 150 g baby arugula
  • 150 g baby spinach leaves
  • 1/2 cup fresh mint leaves
  • 200 g ripe, firm strawberries, sliced
  • 1 cup cooked wheat berries
  • 2 tbsp pumpkin seeds
  • A handful of mixed sprouts
For the strawberry vinaigrette
  • 1/3 cup olive oil
  • 1/4 cup vinegar
  • 1/2 tsp honey
  • 6 ripe strawberries
  • Salt, to taste

Directions

  1. Choose strawberries that are fully ripe, bright red, and firm.

  2. Wash all vegetables and strawberries thoroughly, then dry them very well.

  3. Slice the strawberries for the salad.

  4. In a large bowl, combine the baby spinach, arugula, and mint leaves.

  5. Add the strawberries, cooked wheat berries, avocado slices, and pumpkin seeds.

  6. Add all the vinaigrette ingredients to a blender and blend until smooth, creating a rich, velvety red dressing.

Drizzle salad with the strawberry vinaigrette.

  7. Toss together gently, garnish with sprouts, and serve immediately.

Recipe Tips

Make sure all salad greens are thoroughly washed and completely dry—any excess water will dilute the vinaigrette.

Toss the salad with the dressing right before serving to ensure it coats evenly and doesn’t pool at the bottom of the bowl.

You can substitute the cooked wheat berries with quinoa, buckwheat, or bulgur for a variation in texture and flavor.
