- 1 ripe avocado, sliced
- 150 g baby arugula
- 150 g baby spinach leaves
- 1/2 cup fresh mint leaves
- 200 g ripe, firm strawberries, sliced
- 1 cup cooked wheat berries
- 2 tbsp pumpkin seeds
- A handful of mixed sprouts
- 1/3 cup olive oil
- 1/4 cup vinegar
- 1/2 tsp honey
- 6 ripe strawberries
- Salt, to taste
Directions
Choose strawberries that are fully ripe, bright red, and firm.
Wash all vegetables and strawberries thoroughly, then dry them very well.
Slice the strawberries for the salad.
In a large bowl, combine the baby spinach, arugula, and mint leaves.
Add the strawberries, cooked wheat berries, avocado slices, and pumpkin seeds.
Add all the vinaigrette ingredients to a blender and blend until smooth, creating a rich, velvety red dressing.
Drizzle salad with the strawberry vinaigrette.
Toss together gently, garnish with sprouts, and serve immediately.
