Ingredients

  • 4 chicken breast fillets
  • 4 slices of ham
  • 1 large carrot, cut into sticks
  • 150 g fresh or frozen green beans
  • 50 g graviera cheese, grated (or another semi-hard cheese)
  • Olive oil, for drizzling
  • Salt and pepper, to taste

Instructions

1. Prepare the Chicken

Butterfly each chicken breast to create a large, even surface for filling. Alternatively, ask your butcher to do this.
Place each piece between two sheets of parchment paper and gently pound with a meat mallet to flatten them evenly.

Season both sides of the fillets with salt and pepper.

2. Fill and Roll

On one side of each fillet, layer:

  • 1 slice of ham
  • A few carrot sticks
  • A few green beans
  • A generous sprinkle of grated graviera

Roll the chicken fillets tightly, enclosing the filling. Secure each roll with kitchen twine or toothpicks to keep everything in place during cooking.

Drizzle lightly with olive oil and season the exterior with a bit more salt and pepper.

3. Cook the Rolls

Preheat the oven to 180°C (350°F) with fan.

In a hot skillet, sear the chicken rolls on all sides for 5–6 minutes, until lightly golden.

Transfer the skillet to the preheated oven and roast on the middle rack for 25 minutes, until fully cooked and juicy inside.

4. Serve

Remove from the oven, cover loosely with foil, and let the rolls rest for 5–6 minutes before serving.
Slice and serve warm with seasonal salad, mashed potatoes, or steamed rice.
