Ingredients
Serves 10
- 1½ cups self-rising flour
- 1 pinch of salt
- ½ cup sugar
- 1 teaspoon cinnamon
- 1 egg
- 1 cup milk
- 2 large or 3 small apples, peeled and grated
- 1 teaspoon butter
- 2 tablespoons butter (to garnish)
- 3 tablespoons honey (to garnish)
- Fresh fruits (to garnish)
Directions
Sift the flour into a bowl with the cinnamon and salt.
Add sugar and make a well in the center.
Beat the egg with the milk, pour in the well, and stir with a spatula.
Add the grated apples. If the apple releases too much liquid, add 1 tablespoon of flour to thicken it.
If you have it on hand, a pinch of baking soda in the mixture will make the pancakes very fluffy.
If you have time, let the mixture stand for 20 minutes on the counter.
Heat the butter in a non-stick pan over low heat and pour spoonfuls of the mixture.
Cook each pancake for 1 minute on each side until golden brown.
Melt the honey over low heat until it becomes thinner.
Remove from heat, add the butter, and mix.
Pour over the apple pancakes and garnish with fresh fruits.
