Ingredients
- 150 g baby salad leaves
- 2 ripe but firm fresh figs, skin on
- 1 cup berries
- 10 walnut halves
- ½ red onion, thinly sliced
- ¼ cup olive oil
- 2 tbsp balsamic vinegar
- A little honey, to taste
- A little freshly ground black pepper
- 100 g fresh goat cheese
- Salt, to taste
Directions
Wash the fresh figs thoroughly, keeping the skin on, and slice them into wedges or rounds.
Place the sliced red onion in a bowl, cover with water, and add a little vinegar. Leave it for a few minutes to mellow its sharpness. Drain well.
To make the dressing, combine the olive oil, balsamic vinegar, a little honey, and salt in a small jar. Seal tightly and shake until the dressing is well emulsified.
Place the baby salad leaves in a large bowl. Add the drained onion, walnuts, and berries.
Pour over the dressing and toss gently to coat the leaves without bruising them.
Arrange the salad on a shallow serving plate.
Garnish with the sliced fresh figs and fresh goat cheese, then serve immediately.
Recipe Tips
For the best flavor, let the goat cheese come to room temperature for about 10-15 minutes before serving. The creamy cheese pairs beautifully with the sweetness of the figs and berries and the tangy balsamic dressing.
