Ingredients

- 3 black pork sausages (or any rustic-style sausage)
- 2 kg medium fresh potatoes
- 1 onion, cut into thick slices
- 6 garlic cloves, unpeeled
- 330 ml beer
- Juice of 1 orange
- 1 lemon, sliced
- 2 tbsp mustard
- 1 tbsp dried oregano
- 3 sprigs fresh thyme
- Salt and freshly ground pepper
- Olive oil
Directions
Prepare the ingredients
Slice the sausages into thick rounds. Peel and wash the potatoes, then cut them into thick wedges. Arrange the potatoes in a single layer in a large baking dish or tray.Season the potatoes
Add the garlic cloves, onion, salt, pepper, a generous drizzle of olive oil, the orange juice, mustard, oregano, and thyme. Mix everything well to coat the potatoes evenly.Add the beer
Pour the beer over the potatoes and toss gently again.Roast
Option 1 – Barbecue (recommended):
Roast the potatoes on a gas barbecue with the lid closed, over medium heat, for about 40 minutes, checking occasionally and adjusting the temperature as needed.
Once the potatoes have softened, open the lid, stir them, and nestle the sausage slices among them.
Tuck in the lemon slices between the potatoes, close the lid again, and cook for another 20 minutes, until the dish is golden, aromatic, and the liquid has mostly evaporated.Option 2 – Oven:
Roast the potatoes at 180°C (350°F) for 40 minutes. When they’re tender, add the sausages and lemon slices, and continue baking for another 20 minutes, until everything is beautifully browned and the sauce has reduced.Serve
Serve warm, straight from the pan, with a drizzle of olive oil and a sprinkle of fresh oregano if you like.
Recipe Tips
Cut the potatoes into evenly sized pieces so they cook uniformly. For extra flavor, you can substitute part of the beer with white wine or add a pinch of smoked paprika for a subtle smoky depth.
