4 Servings- 1 bag (or handful) of mixed salad greens
- 1 ripe, juicy peach
- 2 apricots
- 10 cherries, pitted
- 1 tbsp shelled pistachios (preferably Aegina pistachios or similar)
- 1/4 cup extra virgin olive oil
- 1½ tbsp balsamic vinegar
- A pinch of salt
- Freshly ground black pepper, to taste
For Serving
- Katiki cheese (or another soft, creamy cheese such as goat cheese or ricotta)
- Microgreens
- Edible flowers (optional, for garnish)
Directions
Place the mixed salad greens in a large serving bowl.
Slice the peach thinly over the greens, allowing all its juices to fall directly onto the salad — this enhances the natural dressing.
Thinly slice the apricots and add them to the bowl along with the cherries.
Drizzle with olive oil and balsamic vinegar.
Season lightly with salt and a touch of freshly ground pepper.
Toss everything gently to combine.
Plate the salad and add small dollops or spoonfuls of katiki cheese on top.
Sprinkle with microgreens and edible flowers for an elegant, summery finish.

Choose a peach that’s very ripe and juicy — its natural sweetness and juices will enrich the dressing and elevate the overall flavor of the salad. If your fruit isn’t quite ripe, let it sit at room temperature for a day before using
