Ingredients

  • 150 g mixed salad leaves, preferably tender baby leaves
  • 1 cup red seedless grapes
  • 150 g goat cheese or manouri cheese
  • 2 tbsp coarsely chopped walnuts
  • 2 tbsp balsamic vinegar
  • 4 tbsp extra-virgin olive oil
  • A few drops of grape molasses (petimezi), optional
  • Salt, to taste
  • Freshly ground black pepper, to taste

Directions

  1. Choose very tender baby mixed salad leaves. Wash and dry them thoroughly.

  2. Place the salad leaves, grapes, and chopped walnuts in a large bowl.

  3. In a small bowl, whisk together the olive oil and balsamic vinegar. Season with a little salt and freshly ground black pepper, then add a few drops of grape molasses, if using.

  4. Pour half of the dressing over the salad and toss gently to combine.

  5. Cut the cheese into bite-sized pieces and add it to the salad. Drizzle with the remaining dressing and serve immediately.

  6. Alternatively, lightly grill the cheese on a grill pan before adding it to the salad for a warm, slightly caramelized finish.

Recipe Tips

Toast the walnuts briefly in a dry pan over medium heat before adding them to the salad. This brings out their flavor and makes them extra crunchy.
