Ingredients
- 400 g fresh salmon fillets
- Salt
- Freshly ground black pepper
- 2 potatoes, boiled and diced
- 205 g frozen green beans
- 4 hard-boiled eggs
- 2 tablespoons pitted olives, sliced
- 250 g cherry tomatoes, halved
- 1 head of lettuce, washed and thoroughly drained
- 2 tablespoons vinegar
- ¼ cup olive oil
- 1 garlic clove
- Salt
- Freshly ground black pepper
Directions
Season the salmon fillets with salt and freshly ground black pepper and place them on a sheet of parchment paper.
Carefully fold the parchment paper tightly around the salmon to create a sealed parcel. Place the parcel on a baking tray and bake in a preheated oven at 200°C / 400°F for 15 minutes.
Meanwhile, blanch the green beans in a pot of salted boiling water for 5 minutes. Drain them thoroughly.
Roughly chop the lettuce and place it in a large salad bowl.
Add the halved cherry tomatoes, drained green beans, sliced olives, and diced potatoes.
Remove the salmon from the parchment parcel and cut it into bite-sized pieces. Add the salmon to the salad.
Place all the dressing ingredients in a blender and blend until well combined.
Pour the dressing over the salad and toss gently but thoroughly, making sure the dressing is evenly distributed.
Serve immediately.
Recipe Tips
For the best texture and flavor, let the boiled potatoes cool completely before adding them to the salad. This also helps prevent the lettuce from wilting.
