Ingredients

Serves 4
  • 340 g strawberries, plus extra for garnish
  • 1/2 cup granulated sugar
  • 1 cup cold heavy cream (30% fat)

Directions

  1. Wash the strawberries, roughly chop them, and blend them in a food processor with the sugar until smooth and puréed.

  2. In a chilled bowl, whip the cold heavy cream until it forms stiff peaks (whipped cream consistency).

  3. Reserve 1/2 cup of the strawberry purée. Gently fold the remaining purée into the whipped cream, using light movements to keep the mixture airy.

  4. Divide the reserved strawberry purée among four serving glasses or bowls, then spoon the strawberry mousse on top.

  5. Refrigerate for at least 1 hour—ideally overnight—until set. Serve garnished with fresh sliced strawberries.

Recipe Tips

For a brighter flavor, add a small squeeze of lemon juice to the strawberry purée before folding it into the whipped cream.
