Ingredients

Serves 6

  • 1½ kg potatoes, peeled & cut into wedges
  • ⅓ cup olive oil
  • 1 tbsp tomato paste
  • 1 tbsp sweet paprika
  • 1 large tomato, cut into chunks
  • 1 onion, thinly sliced
  • 1 whole garlic bulb, halved
  • 4 sprigs fresh oregano
  • 4 sprigs fresh thyme
  • 1 cup water
  • Salt & pepper, to taste
  • 150g firm feta, crumbled

Directions

  1. Prepare the Potatoes

    Preheat oven to 180°C (350°F).

  2. Place potato wedges in a large baking dish.

  3. Add olive oil, tomato paste, paprika, tomato chunks, onion slices, salt, and pepper. Mix well to coat the potatoes evenly.

  4. Bake the Potatoes

    Place the halved garlic bulb (cut side up) into the dish.

  5. Scatter the oregano and thyme over the potatoes.

  6. Pour 1 cup of water into the pan.

  7. Bake for 1 hour 20 minutes, stirring gently every 30 minutes.

  8. If needed, add a bit of warm water to prevent drying out.

  9. Finish with Feta

    Once the potatoes are tender and have absorbed the flavors, sprinkle the crumbled feta on top.

  10. Return to the oven for a few more minutes, until the feta starts to brown slightly.
