Ingredients
- 200g bulgur wheat
- 3 tomatoes, seeded and diced
- 2 cucumbers, seeded and finely chopped (with skin)
- 5 spring onions, finely chopped (including green parts)
- 1 garlic clove, minced (optional)
- 2 bunches fresh parsley, finely chopped
- 1 bunch fresh mint, finely chopped
- Juice of 1 lemon
- 150ml extra virgin olive oil
- Salt, to taste
Instructions
- Place the bulgur in a bowl and cover it with warm water until fully submerged.
- Let it soak for 10 minutes, allowing it to absorb the water and soften.
- In a medium bowl, combine the bulgur, tomatoes, cucumbers, spring onions, garlic (if using), parsley, and mint.
- Add salt, lemon juice, and olive oil, then mix well.
- Cover with plastic wrap and refrigerate for 2 hours to allow the flavors to meld.
- Stir before serving and enjoy!
