Ingredients

For the pork steaks
  • 8–10 pork neck steaks
  • Fleur de sel, to taste
  • Freshly ground black pepper, to taste
For the beer marinade
  • 330 ml beer
  • 2 garlic cloves, whole
  • 2 onions, peeled and sliced
  • 1 apple, sliced
  • 4–5 sprigs of fresh herbs (thyme, oregano, and rosemary)
  • Mixed peppercorns (pink, green, and black)
  • Olive oil

Directions

  1. Pour the beer into a large, shallow bowl.

  2. Add the whole garlic cloves, sliced onions, apple, and fresh herbs.

  3. Add the mixed peppercorns and drizzle with a little olive oil.

  4. Stir the ingredients together, then submerge the pork steaks in the marinade.

  5. Place a small weight on top to keep the meat fully submerged. Cover the bowl and refrigerate for at least 4–5 hours.

  6. Remove the pork steaks from the marinade and drain well. Pat them dry with paper towels to remove excess moisture.

  7. Allow the meat to come to room temperature while you prepare the grill.

  8. Light the barbecue and let the flames die down until you have a steady cooking heat. Clean and lightly oil the grill grates.

  9. Sprinkle the marinated pork steaks with fleur de sel and place them on the hot grill.

  10. Grill for approximately 15 minutes, turning them regularly to ensure they cook evenly and develop a beautiful golden-brown colour on both sides.

  11. Make sure they are thoroughly cooked in the center.

  12. Transfer the grilled steaks to a cutting board and finish with freshly ground black pepper and a little extra fleur de sel.

  13. Serve hot with grilled vegetables or a fresh seasonal salad.

  14. If you don’t have access to a barbecue, you can easily cook the pork steaks in the oven.

  15. Preheat the oven to 200°C (400°F).

  16. Arrange the marinated pork steaks in a baking tray.

  17. Bake for approximately 30–40 minutes, turning them once halfway through, until nicely browned and cooked through.

Recipe Tips

Don’t skip the marinating time: For the best flavour and tenderness, allow the pork to marinate in the refrigerator for at least 4–5 hours. You can also prepare the marinade the night before.

Pat the meat dry before grilling: Removing excess marinade helps the steaks develop a beautiful sear instead of steaming on the grill.

Let the meat rest: After grilling, allow the pork steaks to rest for 5 minutes before serving. This helps retain their natural juices and keeps them wonderfully succulent.

Check for doneness: Use a meat thermometer to ensure the pork reaches a safe internal temperature of 63°C (145°F), followed by a 3-minute rest.
